Almond Granola with Honey Lemon Yogurt

Pour, mix and bake your way to homemade granola. This recipe is courtesy of Rolling Pin Kitchen Emporium.

Granola Ingredients

  • 4 cups oatmeal

  • 1 cup whole almonds, roasted & chopped

  • 1 cup flaked coconut

  • 1 cup raisins

  • 2/3 cup honey

  • 1 tbsb water

  • 1 tsp vanilla bean paste

  • 2 tbsbs oil

Honey Lemon Yogurt Ingredients

  • 6 cups Greek yogurt

  • 1 cup good honey

  • 2 lemons, zested & juiced

Directions

  1. Put oatmeal, almonds & coconut in a bowl, mix lightly.

  2. Stir together honey, water, vanilla and oil, then combine well with dry mixture.

  3. Spread in a 3-quart, lightly oiled baking pan.

  4. Bake at 325 for 20-25 minutes, stirring every 5 minutes.

  5. Add raisins after baking. When cool, store in airtight container.

Yogurt Directions

  1. Mix all ingredients together. Use 1/2 of lemon juice & zest and taste before adding more.

  2. Let stand for 10 minutes. Serve cold.
