Ingredients

  • 2 cups self rising flour

  • 1-2 cups nonfat plain Greek yogurt

  • Toppings: 1 large egg, sea salt, water, poppy seeds

Directions

  1. Preheat oven to 375˚F.

  2. Place parchment paper on a baking sheet & coat with cooking spray.

  3. In a large bowl, use spatula to combine the flour and one cup of the yogurt until the mixture clumps to a shaggy dough. Add yogurt until you have a good consistency that is not quite sticky.

  4. Dump the mixture onto a lightly floured surface. Knead the dough by hand for 5 minutes until it is smooth and elastic.

  5. Divide the dough into 8 equal parts. Shape each portion into a ball & use your thumb to make a hole in the center of each one.

  6. Arrange the shaped bagels on the prepared sheet. Mix egg with salt & water to create an egg wash. Brush over bagels, top with any desired toppings.

  7. Bake for 20-22 minutes, rotating the baking sheet midway through baking.

  8. Remove tray from oven & increase temp to 450.

  9. Bake for another 3-4 minutes.
