St. Patrick’s Day Cookies
Ingredients
3/4 cup butter
1 3oz lime or apple flavored gelatin
3/4 cup white sugar
2 eggs beaten
1 tsp vanilla extract
2 drops green food coloring
2 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup white chocolate chips
Directions
Mix flour, salt and baking soda in a bowl and set aside
Whisk butter, gelatin and white sugar together
Add 2 drops of green food color, the vanilla flavor, the eggs, then whisk till well combined
Mix in the dry ingredients till well combined
Fold in 3/4 cup of the white chocolate chips
Mold the dough into a ball and refrigerate for up to 2 hours or overnight
Preheat oven to 350
Remove dough from refrigerator. Scoop dough by a heaping tablespoon full and place 3 inches apart on a cookie sheet lined with parchment paper or a silicon mat
Press down cookie dough lightly, place reserved chocolate chips on the top of the cookie
Bake 15 minutes
Remove form oven. Place some more white chocolate chips while cookies are still hot
Allow cookies cool on cookie sheet for about 8 mins then transfer to the cooking rack and let it cool completely
