Oatmeal S’more Cookies
Ingredients
1/2 cup butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 large eggs
1 1/2 tsps vanilla extract
3 cups flour
1 tsp baking soda
1/4 tsp salt
1 1/2 cups old fashioned oats
1 cup semisweet chocolate chips
1 cup mini marshmallows
Directions
In a large bowl, cream the butter, shortening and sugars until light and fluffy, 5-7 minutes.
Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well.
Stir in the oats, chocolate chips and marshmallows; refrigerate until dough is chilled, about 30 minutes.
Roll tablespoons of dough into balls; place 2 in. apart onto greased baking sheets.
Bake at 350° for 8-10 minutes or until golden brown.
Cool for 1-2 minutes before removing from pans to wire racks to cool completely.
