Healthy Banana Breakfast Cookies

Super simple and easy to customize breakfast treats, courtesy of Ambitious Kitchen.

Ingredients

  • 2 large bananas, mashed

  • 2 cups oats

  • Optional add-ins: vanilla extract, chocolate chips, peanut butter chips, cranberries, raisins, chopped walnuts or coconut flakes

Directions

  1. Preheat oven to 350

  2. Blend oats into a food processor or blender until oats become the consistency of flour

  3. Combine mashed bananas & oat flour in large bowl

  4. Mix in any desired add-ins

  5. Spray baking sheet with nonstick spray. Drop dough by large tablespoons onto cookie sheet; flatten a bit with a rubber spatula

  6. Bake for 9-12 minutes or until cookies are set. Remove from oven and cool on wire rack

  7. Cookies will keep in a covered container for a few days, or they can be frozen and reheated

  8. Makes about 16 cookies
