Brown Sugar Asparagus

Asparagus is loaded with vitamin K, folate, fiber and a bit protein - and a welcome change from peas & carrots. Entice munchkins with this semi-sweet take on the veggies…

Ingredients

  • 3 tbsps unsalted butter

  • 3 tbsps brown sugar

  • 1lb asparagus

Directions

  1. Cut the tough ends off asparagus, rinse and pat dry with a paper towel.

  2. Melt butter in a large skillet over medium heat. Stir in brown sugar until dissolved. Add asparagus and saute for 1 minute, stirring constantly.

  3. Add 2 tablespoons of water, cover, and simmer for 3-5 minutes, until bright green and tender; cook longer if a softer asparagus is desired.
